計重量最重係咪lodge>staub>LC
連登pan lodge重到完全唔想入手 平時煎嘢想靚啲就拎個5.5qt staub或者最近入手嘅black steel pan

但cast iron skillet都唔洗拋,重啲都無咩影響?

Cast iron skillet同dutch oven我覺得係兩樣都幾唔同嘅嘢
5.5qt dutch oven煎嘢無skillet咁好
個邊咁高會蒸發得無咁快

Dutch oven個人而言用途分幾種 (TLDR, 相當常用)
A)懶得開中式鑊,因為中式鑊用完要打理(整乾+上油)
- 炒菜
- 蒸嘢(細碟)
- 小炒(當然無鑊咁好,因為兩邊會阻住水蒸發)

B)要極長時間煮嘅嘢,你要穩定嘅溫度
- 燜嘢(我其實少咁做,因為長期熌我會用壓力鍋,煤氣費好撚貴)
- 炸嘢,你落完嘢佢都唔會點跌個溫度

C) 煎完要煲
- 西式湯,如洋葱湯、磨菇湯要先炒後煮
- 雞煲類
- 煎蝦頭來整stock

D) Saucepan唔夠大:
- 煮四個人嘅麵
- 蘿蔔糕煮一大兜蘿蔔絲

Dutch oven其實入面cast iron,只係有個enamel 嘅coating(易洗,但唔係防黏)
好處:
- 好保溫,因為cast iron heat capacity好高,你食完餐飯,個煲入面嘅湯仲會暖暖地
- 溫度好穩定,適合小火simmering(所以適合 #B),亦都唔會落咗舊肉好快降溫(所以都可以煎肉,但問題佢個空間無skillet咁大,要分多幾batch來煎)
- 直接上枱

壞處:
- 佢無carbon steel中式鑊 或 一般易潔鑊咁傳熱,所以你要等耐啲佢先會熱
- 好撚重
- 無得掛起,阻碇
- 無得擺入洗碗機

It is just a standard PTFE non-stick(teflon) with tiny grains of aluminium oxide ceramic reinforcement. Granitium is just their proprietary brand name. There are a few manufacturers that also have ceramic reinforced PTFE.

Aluminium oxide is a really hard ceramic material(it is used in grinding wheels to sharpen steel) so it resists abrasion and helps the coating last longer. I still wouldn't use metal on those pans, no need to cause unnecessary wear.
