After graduating can I follow normal procedures to apply for jobs in the UK?
(need to apply for National Insurance #?)

And most importantly is it a disadvantage if I did not get my degree in the UK, (especially if its only a 2:2). Would it be better if I had taken a master's within the UK first? Or should I gain some experience first in the field (in HK) then go abroad?

One more point for you to consider -

If you were born outside of the UK and received your British Citizenship from one of your parents, then you may be a British Citizen by descent. This means that you cannot automatically pass down your British Citizenship to any of your children born outside of the UK.

You may register any of your overseas born children as British Citizens, under current rules, if you lived in the UK for more than three years before the child was born and apply prior to the child's 18th birthday. Going down this roue will require you to provide evidence of your stay in the UK to the Home Office. I would suggest you to keep any P45 and P60 you got from your work in the UK, as well as council tax (like 差 餉 in Hong Kong) bills and bank statements in your name.
