Bring to room temperature

解說:
用金屬平面物件夾住牛扒可以加快3-4倍速度解凍(frozen steak) /bring to room temp(chilled steak)

How to make:
1. Bring to room temperature
2. Add salt and olive oil(tips: don't use extra virgin olive oil) to each side of the steak
3. Add olive oil to your skillet
4. Heat your skillet with high heat till you see smoke rising from your skillet(smoking hot)(tips: 千祈唔好用易潔鑊)
5. Put your steak to the skillet
6. Pan fried your steak for 1.5 minutes per side(rare/1inch thick steak)
7. Rest your steak for 10 minutes

我鍾意原汁原味,butter煎牛扒容易窿,如果淨係爆蒜蓉就冇問題,個人覺得如果買貴牛扒靚野就唔使搞咁多花臣

呢兩塊咁好味嘅牛扒都係喺city'super 買,應該全港得city'super 一間超市有dry aged steak 賣,不過佢係賣得幾貴,dry aged美國長期穀飼(350days/ usda prime)西冷要$195/100g,dry aged 西班牙Galician Beef(大約草飼養12年嘅老牛)牛柳要$160/100g,前者差唔多等於A5山形牛西冷嘅價錢,後者等於M9澳洲和牛嘅價錢,所以其實都好貴,如果你地要買dry aged Galician beef ,我建議你地買西冷,因為我試過西冷好食過今次牛柳,個人唔鍾意食肉眼,如果dry aged西班牙Galician beef striploin同dry aged美國long term grain fed striploin比,美國就係全方位完美,西班牙就係世上肉味最濃嘅牛肉,但係就犧牲左tenderness
