Think of Zubimendi as the Spanish and smaller version of Declan Rice.

A great passer, defender, can manipulate a whole block and 1v1 too on the ball. Good drive on him (not as powerful as Rice). Technical/stocky in small spaces.

He is not a single holding midfielder in the classical destroyer sense of it but in the ‘Jorginho’ IP sense of it.
